Summer nights require a special diet. The air is warming up. The light stretches for a very long time. Even if you’re just on your balcony in the city, you need something to make you feel like you’re on vacation. Introducing Mediterranean-style tomato fritters. This is not a complicated dish. No culinary degree required. You need ripe tomatoes, fresh herbs and patience to drain the juice.
Golden brown, crispy on the outside and soft on the inside. It tastes like a combination of the sea and the garden. These snacks are inspired by the Greek word keftedes, but instead of meat, they are based on tomatoes, making it impossible to eat just one. Paired with a cold yogurt sauce to break up the richness. An aperitif that makes you feel like you’re on vacation.
Why structure is important
The secret of these fritters is not only the taste. It is humidity control. Tomatoes are mostly water. If you skip the draining step, it will get wet. I like a crunchy dough that falls apart a little when I chew it. The inside should be moist, but not watery. Cheese adds creaminess. Herbs add brightness.
There are two cooking passes. Frying in oil gives them an authentic pub-like taste. Frying makes it lighter, but the flavor remains. Both are valid. However, the yogurt sauce is not negotiable. It must be cold. Must be strong. Balances the heat of richness.
Ingredients for fritters
Start with quality products. The difference between good fritters and great fritters is the tomatoes.
- 600g ripe tomatoes : Grape tomatoes or beefsteak varieties are best. It is juicy and delicious.
- 1 small onion or 4 green onions (new onions) : Adding green onions adds a rich and sweet flavor.
- 2 garlic cloves : freshly chopped.
- Feta cheese 120 g : crushed. This creates a savory and salty taste.
- 2 eggs : Binder.
- 120 g flour : All-purpose flour is enough.
- 1 bag of baking powder (approx. 11 g): This helps the dough to rise a little easier.
- Fresh parsley : about 20 grams chopped.
- Fresh dill : small bunches, about 10 grams.
- Mint Leaves : 8 leaves, optional but highly recommended. It adds a refreshing feeling.
- 1 tsp dried oregano : classic Mediterranean flavor.
- 1 tsp salt : Adjust to your taste.
- Black pepper : freshly cracked pepper.
- Frying oil : Sunflower oil or grape seed oil, about 500 ml for frying.
Making yogurt sauce
Prepare the sauce while the fritters are baking. It should be simple. Strange smell.
- 250 g Greek yogurt : full of fat and great texture.
- 1 lemon : grate the rind. 2 tablespoons of juice.
- 1 tablespoon olive oil : Extra Virgin olive oil.
- 1 garlic clove : Grate or mince.
- 1 tbsp chopped fresh dill : Adds freshness.
- Salt and pepper : Enough.
Mix these together in a bowl. Refrigerate until ready to eat. This is where the magic lies: the contrast between the warm fritters and the cold sauce.
Prepare step by step
1. Pour the water off the tomatoes
Grate the tomatoes with a coarse grater. Put the mass in a colander. Sprinkle a pinch of salt on top. Let stand for at least 15-20 minutes. Salt absorbs excess water. This step is important for the crispiness of the fritters. Squeeze out as much liquid as possible with your hands or a spoon.
2. Mixed base
In a large bowl, mix the drained tomato mass, chopped onion/green onion, minced garlic, crumbled feta, egg, parsley, dill, mint, oregano, salt and pepper. Mix well. The mixture is wet.
3. Add the dry ingredients
Add flour and baking powder. Add enough to thicken the dough. It should be a thick, scoopable mixture. If it’s too runny, add a little more flour. If it is too dry, add eggs or a few drops of water. You want it to hold its shape in the spoon.
4. Cook fritters
- Frying : Heat the oil in a deep frying pan. Even if it is hot, there should be no smoke. Pour a scoop of dough into the oil and flatten it slightly with the back of a spoon. Fry for 2-3 minutes on each side until golden brown and crispy. Drain on paper towels.
- Bake : Preheat the oven to 200°C (400°F). Line a baking sheet with baking paper or lightly oil it. Shape it into putty. Lubricate the surface lightly with oil. Bake for 18-22 minutes. Flip halfway through to even out the color. They are softer than fried, but still delicious.
5. Assembly and serving
Serve the hot fritters immediately on a plate. Put the cold yogurt sauce in the middle of the plate for dipping. Serve with fresh bread or enjoy as is.
Pairings and Variations
What do you drink with this? Goes well with dry white wine. Provence rosé wine is a classic choice. If you prefer a non-alcoholic drink, soda water with lemon is a great option to reduce the richness.
Want to make a change? Change the feta to a milder feta. Add a few chili flakes to the batter and heat. The basic recipe is flexible. The core concept remains the same: tomatoes, herbs, fritters, dipping sauce.
This is not an easy meal. It is intended for a longer stay. It’s meant to be shared. The crisp texture of the fritters, the tough texture of the tomatoes and the cool taste of the sauce.
